Extra-virgin olive oil, for drizzling
A few grinds of salt & pepper
1 lb center cut Applewood bacon slices
Parmesan Cheese & or Garlic Powder, optional garnish
Preheat oven to 400 degrees
Get out jelly roll pan and line with parchment paper or you can use your broiler pan.
Lay asparagus in pan & lightly coat asparagus spears with extra-virgin olive oil. Season asparagus with salt & pepper. Gather 3 asparagus spears and wrap with a 1/2 or full slice of bacon to bundle. Repeat to wrap all asparagus. Bake for 12-20 minutes depending on thickness of bacon & asparagus.
Variation: Sometimes I lay out a layer of bacon and sprinkle one side with parmesan cheese and garlic. Press it into the bacon and wrap with the cheese side towards the asparagus.
If your making this for dinner you can bundle into however many servings you want.
