Remove from heat and add vanilla.  Pour heavy cream mixture over the chocolate chips stirring quickly and constantly until melted.

Plastic wrap on chocolate truffle mixture

Seal air out of truffles as they set up

Pour into a shallow glass dish, cover with plastic wrap.  Press plastic wrap onto the top of chocolate mixture to remove air and prevent a film.  Refrigerate 1-2 hours.  Put approximately 1/2 cup Cocoa powder in a bowl.

How to display and serve truffles

Plated truffles display beautifully awaiting guest arrival

Remove truffle mixture from refrigerator.  Use a melon baller to scoop truffles, hand roll into balls and roll through the cocoa powder, then plate.  We cover with small domes and display as you see here.  When our guests order truffles they open the door to their guest room and find a plate like this on their private table for two for them to enjoy anytime during their vacation.
